Chocolate Peanut Butter Pie


I've recently realized that I probably follow more youtubers than I do bloggers these days. And one of my current favorites is Tasha Edwards from The Sweetest Vegan. If you're not familiar, you should definitely check out her channel. She recently started a new project making hundreds of decorative tarts. Inspired, I made my own version here. From start to finish, it probably only takes 20 minutes. Not to mention, it's pretty healthy all things considered. And if you want, you could even make it totally raw by skipping the oven!

Ingredients

Crust:
1 1/2 cup oats
4 dates, pitted
1/2 tsp. cinnamon
1/8 tsp. salt
1/2 cup water
2 Tblsp. coconut oil

Filling:
1 avocado
2 bananas
2 Tblsp. cocoa powder
1 Tblsp. peanut butter (can add more, or even leave it out)
1/4 almond milk
fruit for garnish

1. Pre-heat oven to 375
2. Process oats, dates, cinnamon, and salt in a food processor. Then add the water and oil. Process again.
3. Spread out the mixture evenly in a pie pan using a baking spatula. Bake 15 minutes, or until golden like so:

4. While the crust bakes, Process all the filling ingredients ingredients in a food processor. 
5. Pour your filling into your baked crust and top with decorative fruit.
6. Refrigerate and serve!
