Cucumber Mint Lemonade with Lychee Boba

Hope you all had a great 4th of July! I didn't do anything too exciting but I did try a new vegan restaurant that just opened in West Palm, The Vegan Cafe (expect a review!). 

Anyhow, here's a recipe for a super refreshing beverage I whipped up in hopes of combating the Florida heat. It helps a little. Either way, it tastes great and is super refreshing without being overly sugary sweet. For those of you unfamiliar with boba, they're small tapioca balls that you put in smoothies and hot or cold beverages. They're not for everyone, but they've definitely grown on me. You can find them in multiple flavors at most Asian markets. 
***Don't forget to also purchase wide straws to suck them up with!

Ingredients

4 lemons, juiced (plus extra for slicing)
1/4 cup agave nectar
10 cups water
cucumber slices
mint
optional: boba of your choice

1. Juice 4 lemons. Stir agave into your fresh juice.
2. Add mixture to pitcher of water. Stir well.
3. Throw in cucumber & lemon slices with fresh mint. Keep refrigerated.
3. Boil boba according to the packages' instructions. Add to each serving with wide straw. (Boba is best served immediately as the consistency will change once it's been refrigerated.)
