Quinoa Almond Salad

Pots/Pans Used: 1!


3 cups uncooked quinoa
2 oz. almonds, ground
1/2 red onion, chopped
4 stalks celery, chopped
1 english cucumber, diced
1 red pepper, diced
3/4 cup parsley, chopped


1 cup tahini
juice of two lemons
2 cloves garlic
3/4 cup water
salt and pepper to taste

1. Cook quinoa (1 part quinoa, 2 parts water).
2. Mix veggies into quinoa. 
3. For the dressing: process all ingredients together. Add the dressing gradually, and continue mixing until well-combined. 
4. Mix in fresh parsley.
